A specific type of mescal from northeast Mexico produced from Agave potatorum or Agave yaquiana using traditional methods which include cooking agave hearts in subterranean ovens. Bacanora has only been legal since 1992 and most of it is still made by clandestine distilleries though it is tolerated by local officials. Even in it's home region of Sonora in Mexico, bacanora has a reputation which can inspire a bit of fear. Bacanora is produced with different gristing, distillation and maturation procedures than other mescals including tequila.
